Banana + Peanut Butter Oatmeal Cookies šŸŖ 🄜

Only 7 ingredients and 3 kitchen equipment pieces needed, I used what I had in the kitchen to create these gluten-free oatmeal cookies. Bananas are the sweetest when they are black on the outside, and the touch of honey makes it perfect. Feel free to add pecans, chocolate chips, or any other ingredients you think would be good! Baking is so fun in this way. Make it your own, I am purely just a guide.

Equipment: baking sheets, a blender, and a large mixing bowl.

Makes about 18 large cookies.

Ingredients:

  • 6 very ripe bananas (i’m not kidding, the riper the better. Black is best!)

  • 3 eggs

  • 2 tbsps vanilla

  • 1/2 cup creamy peanut butter

  • 2 tbsps cinnamon (add coconut sugar if you want it sweeter and no cinnamon)

  • 1/4 cup honey

  • 4 cups oats

Recipe:

  • Preheat oven to 350*F

  • Blend bananas, eggs, vanilla and spices until smooth (about 1-2 minutes). While blending, add in peanut butter and about 1/2 cup of oats.

  • Pour mixture into a bowl. Add 3.5 cups of the oats to the mixture, mixing together.

  • Roll into 1 inch balls then flatten into a cookie shape with your hands. I was able to put 9 cookies on two baking sheets.

  • Bake in the oven for 40-45 minutes until golden brown. Enjoy with honey drizzled over them. A cup of tea or coffee accompanies it well. ā˜•ļø
